If you haven’t figured it out by now, you can grill just about anything! So, we’re back at it, grilling up some peaches for this amazing dessert. While it may look fancy, this is the easiest dessert recipe you’ll make this summer. After grilling the peaches, we topped each with a dollop of mascarpone, toasted pecans, a sprinkle of cinnamon, and a drizzle of honey to create this drool-worthy dessert.
Grilled Peaches w/ Cinnamon Honey Mascarpone
To make this recipe you’ll need:
- 2 tablespoons pecans
- 2 peaches
- 1 tablespoon butter, melted*
- ¼ cup mascarpone
- ½ teaspoon cinnamon
- 1 teaspoon honey
Preheat grill to 400℉
Heat a medium sized skillet over medium heat. Add the pecans to the dry skillet and toast for 4-5 minutes, tossing frequently to prevent burning. The pecans are ready when they are fragrant and slightly darker in color. Remove them from the pan and set aside to cool. Once cool, chop the pecans into smaller pieces.
Slice each peach in half and remove and toss the pits. Brush the flesh of the peach halves with the melted butter and place on the grill, flesh side down. Grill for 3-4 minutes, then flip and grill for an additional 1-2 minutes. Remove the peaches from the grill and place on a serving platter.
Spoon 1 tablespoon of mascarpone on top of each peach half. Sprinkle each with cinnamon and chopped pecans, and finish with a drizzle of honey.
*Vegetable oil or another high heat oil (sunflower, avocado, etc.) can be substituted for the butter.
