Red beets are full of flavor and nutritional value. You can have them pickled, cooked (boiled or roasted) or raw, there are so many ways of preparing them. Today we want to show you a quick slaw that is perfect as a refreshing summer salad or side dish. This recipe comes together quickly and is full of flavor. Enjoy!
Ready in 15 minutes – Serves 6 as a side
To make this recipe you’ll need:
- 2 red beets, peeled and shredded*
- 2 carrots, peeled and shredded
- 1 zucchini, peeled and shredded
- 2 tablespoons mayonnaise
- 2 tablespoons apple cider vinegar
- 1 teaspoon celery seeds
- Salt and pepper to taste
Mix all veggies in a bowl and add the mayonnaise and apple cider vinegar. Sprinkle the celery seeds, salt and pepper and stir to combine.
Serve as a side salad or topping in your favorite hamburger or sandwich.
*You can use raw or cooked red beets.
