Germans take their cheese very seriously. Obazda is a traditional Bavarian spread that is prepared with ripened soft cheeses (a great way to not waste any soft ripened cheese that may be sitting in your fridge) and adding some seasoning and onions for texture, it is delicious on a piece of bread or a warm pretzel. You can find many varieties of this dish, and sometimes even under different names, in various regions of Bavaria.
Ready in 45 minutes – Makes 10 oz of spread
To make this recipe you’ll need:
- 7 oz (200 gr.) Camembert cheese at room temperature
- 3 tbsp soft butter
- 1 small onion diced
- 1 tsp cumin powder
- 2 tbsp paprika powder
- pinch of salt and pepper
- 1 tbsp finely chopped chives
In a bowl, mash the cheese and the butter with the help of a fork until they mix together into a paste. Add the seasonings and the onion and mix well to combine. Cover and place in the refrigerator for 30 minutes. Before serving, sprinkle some of the chives on top of the spread.
Serve with slices of bread, or warm pretzels.
- You can use other soft cheeses such as Brie, or Romadur.
