Hidden Veggie Marinara Sauce

How many times have you had your kiddos refuse to eat their veggies? How many times have your thrown out veggies that you thought were getting bad and you had no plans to use them? If you relate to any of the above questions, let me tell you, we’ve all been there, and this is why this recipe is so cool. You get to prepare a pasta sauce, with a variety of vegetables and your kids won’t complain, because they’ll never know. Use it as a marinara sauce or pizza sauce, make a big batch and freeze it for future use. Follow the recipe or make it your own adding your favorite vegetables!

Ready in 1.5 hours – Makes sauce for 3 meals serving 4

To make this recipe you’ll need:

  • 1 medium size onions diced
  • 4 garlic cloves minced
  • 1 celery stick
  • 1 medium size zucchini
  • 1 medium size eggplant
  • 1 tbsp Oregano 
  • 8 oz mushrooms
  • 1 leak
  • 1 carrots
  • 1 parsnip
  • 2 tbsp tomato paste
  • 2 cans crushed tomatoes
  • 1 tsp sugar
  • 3 cups chicken/veggie stock 
  • 1 bay leave
  • 1 handful of cut up green leaves (spinach, kale, etc) (optional)
  • Olive Oil
  • Salt and Pepper to taste

Heat a heavy bottom pan over medium heat.

Put a little olive oil in the pot and stir in the garlic and the onions. Cook until translucent.

In the meantime, shred all remaining vegetables. Add them to the pot and stir to combine. Sprinkle the oregano over the veggies, season with salt and pepper and stir to combine. Cook for 5 minutes or until the vegetables are soft.

Add the crushed tomatoes, tomato paste, sugar, broth, and bay leave. Bring to a boil, cover the pot and let simmer for 30 to 45 minutes, or until the veggies are coming apart. 

After the sauce has cooked, add the spinach and mix well. Once the spinach has wilted, you can use an immersion blender to blend the sauce smooth, or you can skip this step if you prefer a more chunky sauce.

Serve with your favorite pasta. 

Helpful tips:

  • You can freeze any leftover sauce for future meals for up to 3 months.
  • Blend sauce smooth to use it as pizza sauce.
  • Don’t have all these veggies at hand? Leave them out and use what you have, you can truly make this recipe your own.
