If snacks didn’t exist, I think our kids would melt into oblivion from starvation. We’re always looking for healthy snacks to have on the ready before our sweet angels turn into hangry monsters. These stuffed cucumber cups couldn’t be easier to make; they’re tasty and they’re healthy!
Ready in 10 minutes – Makes 24 cups
To make this recipe you’ll need:
For the hummus:
1- 15oz can of cannellini beans
1 tbsp tahini
1 garlic clove, peeled
Juice from ½ lemon
5-6 basil leaves
½ cup olive oil
Pinch of salt
For the cucumber cups:
- 2 cucumbers, cut into 1-in slices
- ¼ cup shredded parmesan cheese
Make the hummus by adding the cannellini beans, tahini, garlic, lemon juice, basil, olive oil, and salt to a food processor. Blend until creamy. Take the cucumbers and scoop half of the seeds out of each slice. Add a spoonful of hummus to each cup. Sprinkle with shredded parmesan. Enjoy!
- You could use chickpeas to make a more traditional hummus, but the cannellini beans give it a creamier texture.
