Are you ready for some football? This week has been glorious with the NFL season returning for not 1, not 2, but 3 days a week of football! Even though tailgating is not really a thing this season (Thanks global pandemic), you can still enjoy the festivities from your home. And nothing says game day like beer and buffalo wings. So, here’s a lighter version of an American classic that’s sure to be a hit this football season.
Ready in 45 minutes – Serves 6
To make this recipe you’ll need:
For the cauliflower:
- 1 head of cauliflower, chopped into small florets
- 1 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp salt
- 1 cup water
- 2 cups panko breadcrumbs
For the Buffalo Sauce:
- 4 tbsp unsalted butter, melted
- 1 cup hot sauce
For the Feta Buttermilk Dressing:
- ¾ cup buttermilk
- ½ cup feta cheese
- 1 tsp lemon juice
- 6 dashes Worcestershire sauce
- 1 tbsp fresh parsley
- Pinch of salt
Make a batter by mixing flour, garlic powder, onion powder, salt, and water in a medium bowl. Coat each cauliflower floret in batter, then roll in panko breadcrumbs. Place on a greased baking sheet and bake at 450 F for 40 minutes, or until the cauliflower is golden brown and crispy.
While cauliflower is baking, make feta buttermilk dressing by blending together buttermilk, feta cheese, lemon juice, Worcestershire sauce, parsley, and salt. Place in refrigerator until ready to serve.
Make buffalo sauce by whisking together melted butter and hot sauce. Set aside.
When cauliflower is done baking, remove from oven and toss in buffalo sauce until all florets are coated. Return to oven and cook for an additional 5 minutes. Let cool slightly before serving.
