Banana chips are a fun snack for kiddos and adults alike. These can be made quickly and enjoyed for a healthy afternoon snack. The lime cilantro vinaigrette brings the banana chips to another level!
Ready in 30 minutes – Serves 4
To make this recipe you’ll need:
- 2 green bananas
- 3 cups vegetable oil for frying
- 3 garlic cloves
- a handful of cilantro leaves
- 1 tbsp mustard
- 2 tbsp lime juice
- 1/2 tsp honey
- 1/2 cup olive oil
- salt and pepper to taste
For the Banana Chips:
Peel the bananas, and use a peeler to cut thin slices lengthwise. Heat the vegetable oil in a pot and insert the thin banana slices into it, fry until golden brown.
For the Vinaigrette:
In a food processor, put the peeled garlic cloves, cilantro leaves, mustard, honey, lime juice and some salt and pepper. Process all the ingredients into a paste. Keep blending and slowly add ½ cup olive oil until it reaches a smooth consistency.
Dip the banana chips in the vinaigrette and enjoy!
- You can also use green plantains to obtain a similar result.
- Sprinkle some salt on them when they are still hot, the salt will stick better to them this way.
