Zucchini Cheese-sticks

Hunger after school can be a tricky thing to manage, you want to allow your kiddos to eat a snack, yet you don’t want them eating too much and mess up their appetite for dinner. Enter these easy to make zucchini cheese-sticks.

Ready in 60 minutes – Makes 12 sticks

To make this recipe you’ll need:

  • 3-4 cups of shredded zucchini
  • 2 eggs
  • 3 1/2 cups of shredded cheese (it can be a mix of Mozzarella and Parmesan)
  • 3 peeled and minced garlic cloves
  • ½ tsp dried oregano,
  • ¼ cup cornstarch and
  • salt and pepper to taste

Heat the oven to 425 F

Start with the zucchini, place it on a strainer over a bowl and add some salt to it. The salt will release the moisture in the zucchini. Let it rest for 10 minutes, then transfer the zucchini to a tea towel or paper towel and dry it out. Put the zucchini in a clean bowl, add the rest of the ingredients. Mix well until you create a “dough”

Transfer the “dough” into a baking tray (previously lined with parchment paper) and distribute it evenly to about ½ inch thickness. Bake in the oven for about 25-35 minutes or until browned. Cut them into strips when they come out of the oven and let them cool for a little.

Useful Tips:

Dip them in your favorite salsa or enjoy them plain.
