Toast is not just for breakfast. This honey whipped ricotta toast is sure to be a favorite snack for both parents and kids. We love topping it with veggies, like cucumbers and tomatoes, but you can change it up with slices of bell peppers, avocados, or even some prosciutto. The sky’s the limit!
Ready in 10 minutes – Makes 8 slices of toast
To make this recipe you’ll need:
- 1/2 loaf of bread, sliced
- 15 oz. ricotta
- 1 tbsp honey
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
Put bread slices on a baking sheet and broil in the oven for 1-2 minutes or until golden brown.
Place the ricotta in a bowl and whip for 2 minutes, using an electric mixer, until light and airy. Add honey and continue whipping for about 30 seconds until honey is thoroughly incorporated.
Spread 1-2 tbsp of honey whipped ricotta on each slice of toast. Top with cucumber and tomato slices. Finish with a sprinkle of salt and pepper.
Change up the toppings with sliced bell peppers, avocado, or prosciutto.
