What better way to start your morning but with a good bowl of oatmeal! This overnight oatmeal can be prepared the night before and save you loads of time in the morning when you need to get out of the door, but not without a nutritious breakfast to get your day started right.
Ready in 15 minute – Serves 4
To make this recipe you’ll need:
- 1 cup oatmeal
- 2 cups milk (water, coconut milk, almond milk, whatever you want)
- 3 dried apricots finely chopped
- 2 tbsp dried cranberries finely chopped
- 1/2 pear shredded
- 1 tbsp honey
- Fresh fruit or any other topping of your liking.
The night before:
Mix the oatmeal with the milk, apricots, cranberries and pear in a bowl, cover and leave in the refrigerator to rest overnight.
The next morning:
Serve in a bowl and add the honey and any fruit or topping you would like to eat. Some ideas are: chia seeds, chocolate chips, sliced almonds, chopped nuts, strawberries, blueberries, sliced bananas, the sky is the limit!
You can also make these to go and serve in a 12 oz mason jar, add all the toppings, close with a lid and get on your way.
